Clancey & Gale’s Maple Products are following an earlier family tradition from the 1930’s of producing maple syrup. Maple sap was collected in pails and brought back to a sugar shack with horses and wagons.
In 2012, we started our own maple sap collection using pipelines on our own property and at other local woodlots. The maple sap collected is trucked back to our sugar house on our home site for processing and boiling. The number of taps has grown over the years to 1800 taps.
This year we have moved from a wood-fired to an oil-fired maple syrup evaporator; we use a reverse osmosis machine to remove almost 75% of the water from the maple sap thus reducing boil times and energy needed to produce our product. We participate in 3 local farmers markets weekly from May to October as well as other special events. As active members of the Ontario Maple Syrup Producers Association (OMSPA) we adhere to the ‘best practices manual’ of sustainable woodlot management ensuring future generations will be able to enjoy this natural resource.
