We started producing maple syrup in the year 2010, when we had the opportunity to take over a maple operation from a family who had been producing maple syrup for 3 generations. We had spent time helping the family in the sugar bush, so when we took over we had some familiarity with it although still some steep learning curves. We rent the sugar bush and sugar shack from the original family and our close relationship with the property owners acting as mentors helped us out tremendously over the years. We have approximately 2300 taps all on pipeline, where the sap is able to flow from the tree to stainless steel collection tanks while it awaits processing in our wood fired evaporator. The result is delicious pure maple syrup!
